day 15 Breakfast: overnight breakfast rice pudding

Ingredients:

  • 1 cup cooked U.S.-grown brown rice
  • 2/3 cup unsweetened cashew milk (can also use almond, soy, rice, or coconut  milk)
  • 1/4 teaspoon ground cinnamon
  • 1 tablespoon pure maple syrup
  • 1/2 cup dried cranberries or raisins


Directions:
  1. Place the rice, milk, cinnamon, maple syrup, and dried cranberries in a bowl and mix everything together.
  2. Cover and refrigerate at least 4 hours or overnight.  Serve with extra fruit and some walnuts or almonds on the side.
**Note:  You can also heat the rice pudding in the microwave to serve as a hot breakfast.
