- 1 cup cooked U.S.-grown brown rice
- 2/3 cup unsweetened cashew milk (can also use almond, soy, rice, or coconut milk)
- 1/4 teaspoon ground cinnamon
- 1 tablespoon pure maple syrup
- 1/2 cup dried cranberries or raisins
- Place the rice, milk, cinnamon, maple syrup, and dried cranberries in a bowl and mix everything together.
- Cover and refrigerate at least 4 hours or overnight. Serve with extra fruit and some walnuts or almonds on the side.
