- 2 medium red potatoes peeled and cubed
- 1 tsp garlic powder
- 1/2 tsp thyme
- 1/2 tsp sage
- 1/4 tsp paprika
- pinch of cayenne
- salt to preference
Optional Add-ins
- 1/2 batch tofu scramble
- tempeh sausage crumbles
- tomatoes
- vegan sour cream
- vegan nacho cheese
- salsa
- Pre-heat the oven to 450F degrees.
- Toss the prepped potatoes with the seasoning (garlic, thyme, sage, paprika, cayenne, and salt.)
- Spread the potatoes out evenly on a baking sheet lined with parchment paper or a silicone baking mat.
- Bake for 30 minutes, tossing halfway.
- In the meantime, prep anything else you want in your tacos. I love a simple taco with potatoes, tofu scramble, vegan sour cream, and sometimes a little vegan cheese. The tempeh sausage crumbles linked to in the ingredients list are also tasty.
