Breakfast Day 17: Potato Breakfast Tacos

Ingredients
  • 2 medium red potatoes peeled and cubed
  • 1 tsp garlic powder
  • 1/2 tsp thyme
  • 1/2 tsp sage
  • 1/4 tsp paprika
  • pinch of cayenne
  • salt to preference

Optional Add-ins
  • 1/2 batch tofu scramble
  • tempeh sausage crumbles
  • tomatoes
  • vegan sour cream
  • vegan nacho cheese
  • salsa
Instructions
  • Pre-heat the oven to 450F degrees.
  • Toss the prepped potatoes with the seasoning (garlic, thyme, sage, paprika, cayenne, and salt.)
  • Spread the potatoes out evenly on a baking sheet lined with parchment paper or a silicone baking mat.
  • Bake for 30 minutes, tossing halfway.
  • In the meantime, prep anything else you want in your tacos. I love a simple taco with potatoes, tofu scramble, vegan sour cream, and sometimes a little vegan cheese. The tempeh sausage crumbles linked to in the ingredients list are also tasty.
