1 cup couscous, cooked according to the package directions
1 15.5-ounce can kidney beans, rinsed
1 avocado, cut into bite-size pieces
4 scallions, sliced
2 tablespoons fresh lime juice
1 tablespoon olive oil
kosher salt and black pepper
Directions:
Let the couscous cool. Fold in the beans, avocado, scallions, lime juice, olive oil, and ¼ teaspoon each salt and pepper.
