
2 apples
1 tsp cinnamon
¼ cup pecans, chopped
½ cup gluten-free oats
1 tsp cinnamon
1 Tbsp coconut oil, melted
1 Tbsp maple syrup
1 Tbsp ground chia seeds
1 tsp pure vanilla extract
1 tbsp. water
Pinch of salt
Directions:
1. Preheat oven to 375°F. Line a baking pan with parchment paper.
2. Halve the apples and remove the core, keeping a “boat shape”.
3. Place the apple halves on the lined baking pan and sprinkle each half with ¼ teaspoon of cinnamon.
4. In a small bowl, combine remaining ingredients.
5. Pack each half with one quarter of the oat mixture.
6. Bake in pre-heated over for 30 to 40 minutes or until apple is tender.
7. Allow to cool for five minutes before serving.
