Oatmeal Creme Pies

Cookies:
1 cup Earth Balance
¾ cup brown sugar
½ cup sugar
1 tablespoon molasses
1 teaspoon vanilla
2 eggs worth of egg replacer
1 and ¾ cup flour
½ teaspoon salt
1 teaspoon baking soda
¼ teaspoons cinnamon
2 cups oats
Filling:
4 and ½ cups powdered sugar
2/3 cups vegetable shortening
¼ cup tofu cream cheese
5 Tablespoons soy milk
½ teaspoon vanilla
Make cookies. Cream Earth Balance and sugars in a mixer. Add molasses, vanilla, egg replacer, and the rest of the ingredients. Scoop 1 Tablespoon of batter on a cookie sheet lined with parchment paper. Flatten it out a little bit. Bake at 350 degrees for 10 to 14 minutes or until golden brown on the edges.
Make the filling. Beat shortening and cream cheese in a mixer. Alternate with the rest of the ingredients and mix well.
Make the cream sandwiches by adding a little bit of cream in between 2 cookies.
